Today was all about work, work, work and I needed comfort food. I couldn't wait to get home and make scrumptious peppers stuffed with ground chicken and Parmesan cheese. Basically I adapted a recipe and used almond flour instead of bread crumbs, SCD ketchup, and homemade marinara sauce along with some other goodies like garlic, onions, etc. Next time I might try them with some spinach or mushrooms. They were like a little meatloaf in a pepper and definitely hit the spot. Even got a thumbs up from my husband. But best of all, we have lots of leftovers for dinner tomorrow night and lunches this week.

I make mine with green peppers and a mix of ground turkey and legal chicken sausage. I definitely use mushrooms, too, and I like use crumbled, toasted almond bread for the extender--more crouton-y. But I like the cheese on top idea: I"m going to put some on when I reheat!
Also, these things freeze GREAT! It is so nice to have some semi-fast food in the freezer for when you can't get it up to cook.
I would never have guessed that you can freezer these bad boys. Even more of an enigma is how the heck you posted that sassy picture next to your comment. I am definitely a green circle blogger. By the way, your post on an SCDers version of fast food cracks me up every time I read it.
