Well folks we have a winner. I saw this recipe from Debbie on the BTVC-SCD listserv a year ago and filed it away. Then yesterday morning on a whim I decided to whip up a batch. All I can say is that these babies are delicious. I froze the remaining waffles and heated one up this morning with a little butter and honey.

"These waffles filled the house with the most WONDERFUL smell! And they taste GREAT too.
They have a light, crepe-like texture, which makes removing them from the waffle iron a little tricky. Since they have a higher egg to flour ratio than other waffle recipes you have to be quick and have your cooling rack real handy. The extra effort is well worth it, believe me. I cover my racks with paper towels to absorb moisture.
To freeze, I cut waffle size squares of wax paper and layer the paper between individual waffles and freeze in gallon size zip-lock freezer bags." - Debbie
SWEET FRENCH WAFFLES:
-3 Large eggs
-1/4 c. SCD dripped yogurt
-1/4 c. Farmers cheese or DCCC (Debbie uses Farmers)
-2 Tbls. Melted butter
-1 Tbls. Honey
-1 teas. Vanilla extract
-1/4 c. Almond flour
-1/4 teas. Salt
-1/2 teas. Baking soda
-1/4-1/2 teas. Cinnamon
-2 Tbls. chopped pecans
In large bowl, mix first 6 ingredients until creamy. Add dry ingredients and mix until well blended and creamy. Prepare as usual for your waffle maker.
Here's the ingredients for a TRIPLE BATCH:
-9 Large eggs
-3/4 c. Dripped SCD yogurt
-3/4 c. Farmers cheese or DCCC
-6 Tbls. Melted butter
-Scant 1/4c. Honey
-3 teas. Vanilla
-3/4 c. Almond flour
-Scant 1/2 teas. salt
-1 1/2 teas. Baking soda
-1 teas. Cinnamon
-1/4 c. Chopped Pecans

First Days of Football
As a celebration of the first official football game we noshed on the following:
- Hot Crispy Buffalo Wings - sprinkle wings with paprika, salt and pepper then bake at 425 for an hour - flip half way through- finally, mix with your favorite SCD legal hot sauce and butter. Sinful
- Carrot and celery dippers with creamy blue cheese - process together crumbled blue cheese, SCD dripped yogurt and SCD legal mayo. Dip the veggies.
Clearly this recipe is NOT for beginners, or anyone who is symptomatic, but thankfully after 2 years on the diet it IS for me!
