I spend most weekends at my mom's house these days. She is an SCD expert and always makes great lunches! Here is a picture of her roast chicken salad and ice tea with lemon.
Want a great SCD Salad dressing. Boil / cook 2 small bags of carrots until soft. Drain, rinse in cool water, place in frig until cold. I usually add ice to speed the process. When cool, drain off an water (if placed in ice) and puree all the carrots. Add yellow mustard, apple vinegar, celery, onion, pimentos, salt & pepper to taste. Mix well and refrigerate. This makes a great tasting salad dressing. Is always better on day 2 & 3.
Want a great egg salad. Add about 7-8 hard boiled and lightly pureed eggs. It's orange, but Yummm! Also great on a lettuce salad.
Top salad with toasted almonds or crunchy bacon... Wow, out of this world.
I was diagnosed with Crohn's disease in August of 2006. I began following the Specific Carbohydrate Diet (SCD) after five operations/procedures and being hospitalized for about 30 days straight. This site was created to document my day to day experiences managing Crohn's disease with the help of the SCD.
Though one of my favorite past times is watching cooking shows and adapting recipes to be SCD compliant, I am by no stretch of the imagination a culinary talent. I work and commute over 50 hours a week so the time that I spend in the kitchen is minimal. As such, at times you will witness that my lunch is an apple or my dinner is actually breakfast. But these are my adventures in the SCD. Enjoy
